Peanut Butter Granola Seed Bars

Ok, these are seriously rediculously good!!! I was in a baking mood, but I didn’t have a lot of ingredients on hand. While poking around in the pantry I found a bag of granola and an unopened jar of peanut butter. And I thought mmmmmm that would be a good combination! So I set to work creating this wonderful granola bar. As always I have to taste my creations before I go public with them. And OMG!! I’m in love!! This recipe makes an entire cookie sheet full. You could easily half the recipe, but seriously, why would you?!

Peanut Butter Granola Seed Bars:
2 cups natural peanut butter
1 cup coconut oil – melted
1 cup raw honey – melted
1 cup dates – chopped in food processor
2 tsp vanilla
3 cups granola
3 cups puffed quinoa
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup melted chocolate chips (optional)

Chop up the dates into raisin size pieces. Place into large mixing bowl. Add rest of ingredients except seeds and chocolate. Mix it all together, press it into a wax paper lined cookie sheet. Sprinkle the seeds on top and press them in a bit. Drizzle melted chocolate on top. Set in freezer. I left mine overnight. Cut into bars. And people, try try try to not eat the whole own yourself ok. It gonna be tough to share…
