Hassleback Spinach & Monterey Jack Chicken

I made this tonight and wowie is it delicious! This recipe is so ridiculously easy yet your family will think you slaved for hours!

6 boneless skinless chicken breast
1 pkg spinach, fresh not frozen
6 slices Monterey Jack Cheese
1/2 tsp chilli flakes
1/2 tsp pepper
1/2 tsp pink Himalayan sea salt
1/2 tsp garlic powder

Steam the spinach and set aside. Slice the chicken ever 1/2 inch or so, almost all the way through but not quite. Place the chicken on a foil lined baking sheet. Stuff the cuts with spinach and cheese. Sprinkle on the spices and bake at 350* for 25 minutes. Delicious!!!

Don’t be afraid to play with this, change it up. Yes different cheese, maybe mushrooms instead if spinach, and try different spices too.
