Ok, this time I may have outdone myself! Smooth, creamy, chocolatey, protein packed FUDGE!!! And it is so easy to make, put those pots and pans away as this requires no cooking!!
A friend asked me yesterday to send her a healthier version of a fudge recipie, which I did. But I wasn’t satisfied with the recipie, for one I never tried it and two it really wasn’t all that good for you. So this afternoon the OM KITCHEN set to work at creating something better. Although I have sworn off sweets I did sample these just to make sure they were good before I posted them. OMG……..probably the best fudge I have ever had! This coming from a girl who once (or twice) drove four hours to Jasper just for fudge!!
1 cup coconut oil (softened)
1 cup raw honey
1 cup chocolate protein powder (I use Vega Sport Recovery)
1/2 cup cocoa powder
2 tsp vanilla
1/2 tsp salt
Optional 1 cup coconut, or nuts, or crushed candy canes!
Put all ingredients except optional last one into food processor, blend until smooth, add your optional item(s), blend again, just until incorporated. Pour into wax paper lined 8×8 pan and freeze 1-2 hours. Best served cold.
I didn’t have any nuts on hand so I mixed in coconut and then pressed a bit more into the top before freezing. Thought it would make them look Christmasy.
