Baked Apple Quinoa

Baked Apple Quinoa. Perfect for those chilly mornings when you need something warm and comforting for your belly. Also great served cold, or top it with your favourite ice cream and turn it into dessert!

2 cups quinoa, uncooked
4 cups coconut water
6 apples, peeled & cored & diced
1 generous Tbsp Cinnamon
1 cup dry cottage cheese
2 eggs
1/2 cup milk
1/2 cup unsweetened applesauce
1/2 cup melted butter
1/2 cup melted raw honey
1 tsp baking powder
1/2 tsp salt
1 cup walnuts
1 cup coconut

Combine quinoa and coconut water in a medium sized pot. Bring to a boil, reduce heat to low and allow to simmer until all liquid is absorbed. Set aside to cool. In a large bowl combine rest of ingredients and add quinoa. Mix together. Place mixture into a 9×13 pan, bake at 350* for approx 20-25 min. ENJOY!
