For those of you who have been following Cha-Cha's (aka Michelle Krause) progress, you know she's down over 80 pounds and 60 inches...to help put it into perspective she is holding up the jeans she wore when she started...take note how much smaller her shoulders are now compared to what her waist WAS!!!! Isn't she amazing?

Tonight's Dinner was Quinoa Chicken Salad
Recipe and Benefits are as follows:
1/2 cup quinoa cooked in low sodium organic vegetable broth
3 tablespoons of Madras Curry Powder added to cooked quinoa
1 asparagus bundle lightly steamed & chopped
1.5 breasts of grilled skinless chicken breast (left over)
1/2 Roma tomato diced
1/3 English cucumber diced
1 large garden fresh carrot chopped
1 tablespoon of fresh garlic
1 teaspoon of lemongrass paste
